Delicious Celeriac and Apple Soup

This comforting apple and celeriac soup is a perfect blend of earthy, sweet, and savoury flavours. The recipe is straightforward and uses simple kitchen techniques, making it accessible for every home cook.

Ingredients

  • 450 g celeriac, peeled and cut into 3 cm pieces
  • 200 g onions, quartered
  • 270 g celery stalks, cut into 3 cm pieces
  • 25 g unsalted butter, diced
  • 520 g water
  • 250 g apples cored and quartered
  • 1 tsp sea salt
  • ¼ tsp ground black pepper (or to taste)

Preparation

  1. Prepare the Vegetables:
    Peel and chop the celeriac, onions, and celery into roughly 3 cm pieces.
  2. Sauté the Base:
    In a large saucepan or soup pot, melt the butter over medium heat. Add the celeriac, onions, and celery. Sauté for about 5–7 minutes, stirring occasionally, until the vegetables begin to soften and the onions turn translucent.
  3. Simmer:
    Pour in the vegetable stock. Bring to a gentle boil, then reduce the heat and simmer for 15 minutes.
  4. Add Apples and Seasoning:
    Add the cooking apples, dessert apples, salt, and pepper. Stir well and continue simmering for an additional 15 minutes, until all the vegetables and apples are tender.
  5. Blend:
    Remove the pot from the heat. Use a hand blender (immersion blender) or transfer the soup in batches to a countertop blender. Blend until smooth and creamy. If you prefer a chunkier texture, blend for less time.
  6. Adjust Seasoning:
    Taste and adjust salt and pepper as needed. If the soup is too thick, add extra water to reach your desired consistency.
  7. Serve:
    Spoon the soup into bowls. Serve with your favourite bread or a light salad.

Tips & Variations

  • For a richer flavour, stir in 80 g of blue cheese vegan alternative in small pieces just before serving.
  • Garnish with fresh herbs like parsley or chives for a burst of colour.
  • For a vegan version, substitute olive oil for butter and omit the chicken broth.
