• 75 g Alpro coconut yogurt

• a pinch of baking powder.

• 190 g frozen berries

• 100 g agave syrup

• 10 g agar

• 190 ml liquid whipped cream

White chocolate mousse:

• 160 g white chocolate

• 190 ml liquid whipped cream

• 7 g agar

Preparation Steps

Preparation and cooking time: 2-2.5 h.

Step 1: Prepare the Crust

  1. In a mixing bowl, beat the egg and agave syrup at high speed until the mixture doubles in volume.
  2. Add the melted butter and coconut yoghurt, mixing well.
  3. Gradually incorporate the flour, baking powder, salt, and carob powder.
  4. Pour the batter into a 19 cm mould and bake for about 15 minutes. Perform the toothpick test to ensure it’s cooked through.

Step 2: Make the Berries Mousse

  1. In a saucepan, combine the frozen berries and agave syrup over low heat, stirring until reduced and thickened. Set aside to cool.
  2. In a separate pot, mix 10 g agar with 385 ml water and bring to a boil. Once boiling, add it to the warm berry mixture and stir well. Allow it to cool to room temperature.
  3. Meanwhile, whip the vegetable cream until fluffy and mix it with the berries.
  4. With the baked crust still in the mold, gently add the berry mouse.
  5. Refrigerate for at least 30 minutes while you prepare the white chocolate mousse.

  1. Melt the white chocolate with 100 ml of whipped cream over low heat until smooth.
  2. In another pot, mix 7 g agar with 270 ml water, bring it to a boil, then add it to the melted chocolate mixture.
  3. Once cooled to room temperature, fold in 90 ml of whipped cream.
  4. Pour this luscious white chocolate mousse over the berry layer and refrigerate overnight for best results.
