Apple Bundt cake is a delightful dessert that captures the essence of fall with its warm spices and juicy apple pieces. This review will focus on a low-protein apple Bundt cake recipe adapted from the Low Pro Living Cookbook developed by Sasha Cranwell, mother of a PKU child. The recipe stands out for its simplicity, flavour, and versatility.

The apple Bundt cake recipe is straightforward and requires no fancy equipment, making it accessible for bakers of all levels. The preparation takes about 20-30 minutes, while the baking time is approximately 35 minutes. This cake can be made using a variety of apples, including Gala, Jonathan, Idared, Golden, Granny Smith, allowing for personal preference in sweetness and tartness.

In my adaptation, I transformed everything into grams. Instead of sugar, I employed date powder. Please see the list and quantities of ingredients below.

Preheat the oven to 180 C and grease the Bundt shape with margarine or butter. I used melted butter for greasing. Mix the dry ingredients: low protein or gluten-free flour, oat flour, dates powder, orange zest, cinnamon, baking powder and salt.
Peel and core the apples. You can ease the chopping process by using a food processor. Mix the chopped apples with the wet ingredients: maple syrup, olive oil, melted butter, quail egg (I used two quail eggs instead of xanthan gum for binding the batter), orange juice and water.
Mix the dry and wet ingredients well, add them to the Bundt pan, level the mix with a spoon, and leave it in the oven for 35 min.
When done correctly, the apple Bundt cake emerges from the oven with a golden-brown crust and a moist interior filled with tender apple pieces. Adding powdered sugar or a glaze of choice can elevate its presentation, making it suitable for gatherings or special occasions.
